Watermelon granita is a chilled frozen treat that’s perfect for hot summer days. Serve it on its own as a dessert, or in between a multi-course dinner as a palate cleanser.
INGREDIENTS
- • 4 cups of seedless watermelon, diced
- • 2/3 cup of caster sugar
- • 1/4 cup fresh lime juice
- • Zest of 1 lime
- • Mint leaves to garnish (optional)
METHOD
- Cut the watermelon into 5cm cubes, removing any seeds. Place the cubed watermelon on a baking sheet and freeze for at least two hours or until solid.
- Once your watermelon is frozen, in a blender or food processor, blitz the frozen watermelon cubes, sugar, lime juice, and lime zest. Blend until smooth. Taste the mixture – if you’d like it sweeter, add more sugar and blend again.
- Pour the watermelon mixture into a shallow baking dish, spreading it evenly. Place the dish in the freezer and let it freeze for 30 minutes.
- Remove the mixture from the freezer. Use a fork to scrape and fluff the partially frozen mixture, breaking up any ice crystals. Repeat this process every 30 minutes for about two to three hours, or until the granita has a light and fluffy texture.
- It’s time to enjoy your granita! Scoop it into fancy cocktail glasses or pretty glass bowls and garnish with fresh mint leaves.
