Snuggle up with this bone-warming vegetable soup recipe.

INGREDIENTS

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 parsnip, peeled and diced
  • 1 large white potato, peeled and diced
  • 1 small sweet potato, peeled and diced
  • 6 cups vegetable or chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup kale or spinach, chopped
  • Grated cheese for garnish (optional)

METHOD

  1. Heat the oil in a large pot over medium heat. Add chopped onions and garlic, and sauté until soft and translucent (about 3 to 4 minutes).
  2. Add carrots, celery, parsnip, potato, and sweet potato to the pot. Cook for another 3 minutes, stirring occasionally.
  3. Pour in the vegetable or chicken broth and add dried thyme, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for about 20 to 25 minutes, or until the vegetables are tender.
  4. Add the chopped kale or spinach to the soup and cook for 3 minutes.
  5. Taste the soup and add salt and pepper if needed. Garnish with grated cheese.
