Snuggle up with this bone-warming vegetable soup recipe.
INGREDIENTS
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 3 carrots, peeled and diced
- 2 stalks celery, diced
- 1 parsnip, peeled and diced
- 1 large white potato, peeled and diced
- 1 small sweet potato, peeled and diced
- 6 cups vegetable or chicken broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup kale or spinach, chopped
- Grated cheese for garnish (optional)
METHOD
- Heat the oil in a large pot over medium heat. Add chopped onions and garlic, and sauté until soft and translucent (about 3 to 4 minutes).
- Add carrots, celery, parsnip, potato, and sweet potato to the pot. Cook for another 3 minutes, stirring occasionally.
- Pour in the vegetable or chicken broth and add dried thyme, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for about 20 to 25 minutes, or until the vegetables are tender.
- Add the chopped kale or spinach to the soup and cook for 3 minutes.
- Taste the soup and add salt and pepper if needed. Garnish with grated cheese.
