Love chocolate and marshmallows? Here’s a fun rocky road recipe that combines a few sweet favourites to create an elevated Easter treat.

INGREDIENTS

  • 400g milk chocolate (use white or dark chocolate if you prefer)
  • 100g marshmallow bunnies
  • 125g packet of candy coated chocolate mini eggs (Tip: buy an extra packet of mini eggs, because they’re yummy to snack on while you’re cooking)
  • 1 cup of mini marshmallows
  • 1 cup of Iced VoVo biscuits, roughly chopped
  • A pinch of cooking salt

METHOD

  1. Line a slice pan or small baking tray (you want your tray to be at least 5cm deep) with baking paper, letting it hang over the sides so it’s easy to lift your rocky road out of the pan later. Start snacking on your extra bag of mini eggs (optional).
  2. Break the chocolate into pieces and melt it in a heatproof bowl over a saucepan of simmering water, or microwave it in 30 second bursts, stirring until smooth. Add a pinch of salt.
  3. In a large bowl, combine the chopped biscuits, mini marshmallows, half the mini eggs, and half the marshmallow bunnies.
  4. Pour the melted chocolate over the mixture and stir until everything is coated.
  5. Spread the mixture into the lined tin. Continue snacking on your extra bag of mini eggs (optional).
  6. Press the remaining marshmallow bunnies and mini eggs into the surface so they’re visible.
  7. Pop it in the fridge for one to two hours, until your rocky road is firm. You can then slice it into squares and enjoy!
