Hop to it! These fluffy vanilla cupcakes topped with creamy buttercream and adorable bunny decorations are fun to prepare and delicious to eat!
Ingredients
Cupcakes
- 1 ½ cups (190g) all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) sugar
- 2 large eggs
- 2 tsp vanilla extract
- ½ cup (120ml) milk
Icing
- 1/2 cup (230g) unsalted butter, softened
- 2 cups (375g) caster sugar
- 2 tbsp milk
- 1 tsp vanilla extract
- A dash of food colouring (you choose the colour, we love pastels!)
To decorate (choose a few, or all of these and be creative!)
- Mini chocolate or candy eggs
- Mini marshmallows (for bunny ears)
- Mini chocolate chips (for bunny eyes)
- Pink jelly beans (for the nose)
Method
- Preheat your oven to 175°C. Line a 12-cup muffin tin with cupcake liners.
- In a bowl, whisk together the flour, baking powder, and salt. In a separate bowl, beat the butter and sugar until light and fluffy. Add eggs one at a time, then mix in the vanilla. Alternate between adding the flour mixture and milk, starting and ending with the dry ingredients.
- Divide the batter evenly among the liners and bake for 18-20 minutes or until a toothpick comes out clean. Let cool completely.
- Beat butter for the icing until smooth, then gradually add in the sugar. Mix in vanilla and milk, beating until fluffy, then add food colouring to the icing.
- Pipe a swirl of frosting on each cupcake, then you’re ready to decorate. You might like to cut mini marshmallows diagonally to create bunny ears, then add mini chocolate chips for eyes and a pink jelly bean for the nose. Or you could create a nest of chocolate or candy eggs on your cupcake.
