Sunny, warm January days call for cool drinks, and this non-alcoholic punch starring fresh fruit with a fizzy twist is refreshing, making it a perfect summer treat for the whole family.

Ingredients (serves 2-3)

  • 1 orange, freshly juiced (about ½ cup)
  • ½ cup fresh pineapple juice
  • ¼ cup fresh raspberry puree (about 1 cup raspberries blended and strained)
  • 1 lime, freshly juiced (about 2 tablespoons)
  • 1 teaspoon of honey or agave syrup (optional, for extra sweetness)
  • 1 cup of chilled sparkling water or ginger beer
  • Ice cubes
  • a sprig of rosemary and extra whole raspberries to garnish each drink (optional)

Method

  1. Blend the fresh raspberries until they are smooth in a food processor, then strain through a fine-mesh sieve to remove the seeds. Set the puree aside.
  2. In a large jug, combine orange juice, pineapple juice, lime juice, and honey/agave syrup
    (if using) and stir to mix.
  3. Fill glasses with ice cubes and pour the juice mixture evenly into each glass, filling the glass to about two-thirds full.  Slowly add the sparkling water or ginger beer to top off the drink.
  4. Garnish each glass with rosemary sprigs and extra whole raspberries, and serve immediately to enjoy the fizz!
