Here’s a sweet and savoury salad that’s perfect for a picnic in the park or brunch by the bay.
INGREDIENTS (Serves 2)
SALAD
- 2 cups of cubed watermelon
- 1/2 cup of cucumber, sliced
- A small red onion, thinly sliced
- 1/4 cup of feta cheese, crumbled (goat’s cheese is also a good alternative to feta)
- A handful of fresh mint leaves, chopped
- Basil to garnish (optional)
DRESSING
- 4 tbsp of extra-virgin olive oil
- 1 tbsp of balsamic vinegar
- 1 tbsp of honey
- Salt and pepper to season
METHOD
- In a large bowl, combine the watermelon, cucumber, red onion, feta and mint leaves.
- Now make the dressing. In a small bowl or a jar with a lid, mix together the extra-virgin olive oil, balsamic vinegar, and honey until thoroughly combined. Season with a pinch of salt and pepper. Add extra balsamic vinegar if you like a bit more acidity.
- Drizzle the dressing over the watermelon, cucumber, red onion, feta cheese and mint, then gently toss.
- Now it’s time to chill! Pop your salad in the fridge for about half an hour to let the flavours mingle, then serve chilled (add your basil garnish now if you’re using it) and enjoy.
