Cold winter mornings call for bone-warming breakfasts. Gather a few ingredients, turn on the oven, and try this scrumptious baked egg recipe. The ingredient list below can be changed to suit whatever herbs and vegetables you have on hand.
INGREDIENTS
- Baby spinach
- Thinly sliced cooked ham or chorizo
- Finely sliced chilli
- Fresh eggs – allow two per person
- Tinned tomatoes
- Salt and pepper to taste
- Parsley or chives to finish, and toast or
baguette to serve
METHOD
- Preheat your oven to 200°c (180°c fan-forced).
- Grease a small oven-proof ramekin or a medium to large baking dish with oil or butter. You can make small individual serves or cook everything in one large baking dish.
- Layer the ham or chorizo, baby spinach, chilli, and tinned tomatoes.
- Crack two eggs over the top of the small ramekin, or multiple eggs atop a larger baking dish.
- Bake in the oven until the whites of the eggs are cooked.
- Garnish with parsley or chives, season with salt and pepper, and serve with buttered toast or a fresh baguette of crusty bakery bread.
Use whatever ingredients you have on hand, including sliced mushrooms, kidney beans, chilli flakes – this method of cooking eggs allows you to try many different variations, and is a great way to bump up your daily vegetable intake.
